Healthy Banana Peanut Butter Raisin Cookies

  • 12 unsweetened applesauce
  • 1 12 cupsrolled oats (or 2 cup of quick oats)

  • 12 cup of shredded unsweetened flaked coconut

    DIRECTIONS

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, mash the bananas, then stir in the apple sauce, vanilla and almond extract, peanut butter, salt, cinnamon, honey and shredded coconut.
  • Stir in oats and raisins.
  • Using a small cookie scooper, spoon about 1 tablespoon of cookie mixture onto a pan greased with coconut oil (or an oil of your choice).
  • Flatten and shape your cookie to your liking.
  • Bake for 15-20 minutes.
  • Allow to cool for 10 minutes, then eat, enjoy and share the goodness.
  • Variations: Instead of raisins, you can add chocolate chips, craisins or chopped walnuts.
