Healthy Banana Peanut Butter Raisin Cookies

1cup of 3 ripe banana
2⁄3cuppeanut butter
1⁄2unsweetened applesauce
1 1⁄2cupsrolled oats (or 2 cup of quick oats)
1teaspoonvanilla extract
1⁄2teaspoonalmond extract
2tablespoonshoney
1⁄4teaspoonsalt
1teaspooncinnamon
1⁄2cup of shredded unsweetened flaked coconut
1⁄3cupraisins

DIRECTIONS
Preheat oven to 350 degrees.
In a large mixing bowl, mash the bananas, then stir in the apple sauce, vanilla and almond extract, peanut butter, salt, cinnamon, honey and shredded coconut.
Stir in oats and raisins.
Using a small cookie scooper, spoon about 1 tablespoon of cookie mixture onto a pan greased with coconut oil (or an oil of your choice).
Flatten and shape your cookie to your liking.
Bake for 15-20 minutes.
Allow to cool for 10 minutes, then eat, enjoy and share the goodness.
Variations: Instead of raisins, you can add chocolate chips, craisins or chopped walnuts.
