INGREDIENTS 1⁄2 cupcorn flake crumbs 1⁄2 cup grated parmesan cheese 1⁄4 teaspoonsalt 1⁄2 teaspoonblack pepper 3eggs 2smallzucchini
DIRECTIONSSlice zucchini into fries.Blend cornflakes in blender or food processor until you have 1/2 cup of fine crumbs. Add Parmesan, salt and pepper to and blend until well mixed. Do not melt cheese! Place crumb mixture into a shallow bowl.Beat eggs in separate shallow bowl.Batter fries by dipping in beaten eggs, then into crumb mixture in a separate bow.Place fries on foil lined baking sheet. Bake at 425 degrees for 20 – 25 minutes. Flip once halfway through baking time.
