400g pack Waitrose Mediterranean Roasting Vegetables
Zest and juice of 1 lemon
2 tsp wholegrain mustard
260g pack Waitrose Skinless & Boneless Cod Fillets
1. Preheat the oven to 200°C, gas mark 6. Place the vegetables in a small roasting tray. Drizzle over half the lemon zest and juice and bake for 10 minutes.
2. Meanwhile, mix the remaining lemon zest and juice with the mustard.
3. Place the cod on top of the vegetables and spread over the mustard mixture. Bake for a further 15 minutes or until the cod is just cooked. Serve with steamed baby new potatoes.
