Cranberry Sauce Muffins

Ingredients

  • 2 cups all-purpose flour
  • ½ cup packed brown sugar
  • ¼ cup white sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • 1 cup cranberry sauce
  • ¾ cup milk
  • ¼ cup vegetable oil
  • 1egg, slightly beaten
  • 1 teaspoon vanilla extract

    Preheat oven to 400 degrees F (200 degrees C). Grease 18 muffin cups or line with paper muffin liners.

    Whisk flour, brown sugar, white sugar, baking powder, salt, cinnamon, and cardamom together in a bowl. Beatcranberry sauce, milk, oil, egg, and vanilla extract together in a separate bowl. Stir flour mixture into cranberry sauce mixture until batter is just-moistened; pour into prepared muffin cups.
