Grab your favorite sauté pan, because tonight you’re making this one-pan cilantro lime chicken and rice. It’s full of bold flavors like cilantro and feta cheese, makes a great dinner, and is a perfect recipe to make a lot of leftovers and take some of the hassle out of weekend meal prep.
The chicken and rice are great staples, but the star of this dish is a rich, creamy, vivid green sauce that’s made all at once in the blender. Make it by combining avocado, feta cheese, minced garlic, lime juice, olive oil, a bit of red wine vinegar, and a chopped jalapeño pepper in a blender with fresh cilantro leaves. Purée it until it’s completely smooth. It’ll be bright green and gorgeous and smell powerfully of cilantro.
If you’re not a huge fan of cilantro, the author suggests dried cilantro as a more mild substitute. You could also just leave the cilantro out entirely, or try some freshly chopped parsley instead.
Cook the chicken breasts by seasoning them with salt and chili powder and browning them in olive oil, then use the same pan to cook some chopped onion until it’s soft and translucent. Once that happens, add some fresh minced garlic, cumin, and uncooked long-grain rice to the pan and stir until everything is thoroughly combined and coated with a thin layer of the oil and cumin. Add a bit of salt and enough water to cook the rice and bring it to a simmer. Then just put the chicken in the pan, on top of the rice, cover the pan, and let it cook until the rice has absorbed all the liquid and finished cooking. The chicken should be cooked through at that point as well, so you can just scoop some chicken and rice onto a plate and drizzle it with some of that bright green dressing.
If you have leftover sauce, the author says you can keep any extra in the fridge and use it for dip or tacos afterwards. It also sounds like it’d be great for meal-prepping bowls to take to lunch the next day.
