DIRECTIONS
In large skillet, heat oil over medium-high heat; fry onion, mushrooms, green pepper,corn, chili powder, tomatoes, chicken, salt and pepper until liquid is evaporated, about 8 minutes.
Spoon on tortillas; Spoon on some cheese and fold in half.
Add 1 teaspoon of oil to skillet.
Add quesadillas and fry a few minutes turning once, until golden and cheese is melted; 10-15 minutes.
Cut into halves or quarters.
Serve with bowl of sour cream and bowl of salsa.
