As a kid I use to spend my summers in Greece and we lived next door to a simple Greek Cafe and my Uncle would send me over there to get some Souvlaki to go❣️❣️It came with fries and a Greek salad ? It is the ULTIMATE fast food in Greece…nothing beats marinated and grilled meat to perfection on a stick ????#Greek #Souvlaki ??
Ingredients
- cubes Pork Loin cut into bite size
- Olive oil
- Lemons squeezed for the juice
- White wine (just a little)
- Onion chopped
- Garlic minced
- Ground Thyme
- Greek Oregano
- Dried Rosemary cut up
- Fresh Mint chopped
- Sea Salt or Kosher Salt
- Cracked Black Pepper
- Wooden skewers
- Water
- Large bowl or plastic container
Steps
Wash pork loin cut off the fat and cut into cubes
Emulsify the olive oil and lemon juice then add the white wine and whisk all together
Add the next 7 ingredients to the olive oil mixture and WHISK together then add to the cubed pork
Mix it all together with your hands and let it marinate overnight in the fridge
Next Day soak wooden skewers in water for 30 minutes and take meat out of the fridge
Meanwhile get your grill ready with a few coals (I used a hibachi)
After skewers have soaked place the cubed meat on the skewers
When grill is hot and ready place the pork skewers on the hibachi (a hibachi works best for this) turning the meat several times
When the meat is ready take off the grill and imediately squeeze fresh lemon juice all over the souvlakia (I saw them do this in Greece) Then serve with Fries, Greek salad, and garlic bread #KaliOrexi
