Ayam Panggang Kecap / Baked Chicken in Sweet Soy Sauce

I got the recipe from chef Willgoz on Youtube. Even though the title says sweet soy sauce, the soy sauce itself doesn’t really play an important part. The other spices help make the rich taste.

It is very tasty! enjoy by itself or with a plate of hot rice with some sambal. Hope you like it!

Ingredients

  1. 5 tbsp sweet soy sauce
  2. 1 whole chicken, cut into 4-8 (I use 5 drumsticks)
  3. Other:
  4. 2 pieces lemongrass, smashed
  5. 5 kafir lime leaves
  6. 250 ml water
  7. 2 tsp salt
  8. 1 tsp sugar
  9. Chicken powder if you want
  10. 5 tbsp oil
  11. Spice paste:
  12. 5 red curly chillies
  13. 2 cm gallangal
  14. 2 cm ginger
  15. 2 cm turmeric
  16. 5 candlenut (lightly panfried)
  17. 5 tbsp tamarind juice
  18. 1 tsp salt
  19. 8 shallots
  20. 5 garlics

Steps

  1. For the paste: blend everything in a blender or grind using stine mortat and pestle until it becomes a smooth paste.

  2. Put the oil in a pan. Add in the chicken, the spice paste and all the other ingredients, such as the lemongrass & lime leaves, except for the seasonings.

  3. Then add in the water. Mix thoroughly. add in the seasonings.

  4. Simmer until the spice paste thickens and penetrate through the chickens.

  5. Take the chickens out. Continue simmering the paste until really thick. Turn off the heat.

  6. Put the chickens on a tray. Add the spice on top.

  7. Preheat the oven to 200°c.

  8. Put the chickens in. Bake for 10-15 minutes.

  9. Serve.
