Cheesy white bean dip

It’s a tasty dip for get togethers


  1. 2 (15 oz) cans cannellini beans rinsed and drained
  2. 1 cup chicken stock
  3. 1 1/2 cups shredded Monterey jack cheese
  4. 3/4 cup roasted red peppers roughly chopped
  5. 1/2 cup feta cheese crumbles
  6. 2 Tablespoons lemon juice
  7. 1/4 teaspoon salt
  8. 1 teaspoon oregano
  9. 1/8 teaspoon cayenne pepper


  1. In a medium saucepan heat beans and stock on medium heat until warmed through. Remove from heat and stir in Monterey jack cheese and roasted peppers

  2. Place bean mixture in a food processor and blend till smooth adding in a little more stock if needed

  3. Pour the mixture into a bowl and stir in feta, lemon juice, oregano, salt and cayenne pepper

  4. Serve warm with chips and vegetables of choice
