- 1 kg Chicken breast
- 5 tbsp oil
- 2 onions
- 100 g Indian curry paste
- 2 cups rice
- 500 ml chicken stock
- 500 g frozen mixed veg
Steps
Pre-cook rice (use slightly less water than usual). Chop onions.
Heat up oil, then fry onions for 4-5 minutes or until soft
Add chicken to pan and fry a few minutes till slightly browned
Add curry paste and rice, mix well to coat evenly
Add in chicken stock and frozen veg. Leave on heat 9 till it boils
Mix well, lower heat to 6, cook till liquid reduced
