Chicken Pilaf



  1. 1 kg Chicken breast
  2. 5 tbsp oil
  3. 2 onions
  4. 100 g Indian curry paste
  5. 2 cups rice
  6. 500 ml chicken stock
  7. 500 g frozen mixed veg


  1. Pre-cook rice (use slightly less water than usual). Chop onions.

  2. Heat up oil, then fry onions for 4-5 minutes or until soft

  3. Add chicken to pan and fry a few minutes till slightly browned

  4. Add curry paste and rice, mix well to coat evenly

  5. Add in chicken stock and frozen veg. Leave on heat 9 till it boils

  6. Mix well, lower heat to 6, cook till liquid reduced
