Chicken Sate

It’s Indonesian version, or more like my own version of chicken sate.

Ingredients

  1. 3.5 kg chicken thigh fillet
  2. 2 red onions
  3. 20 garlic cloves
  4. 1 lemon juice
  5. 2 tsp salt
  6. 2 tsp coriander ground
  7. 1 cup kecap manis
  8. 50 gr coconut sugar
  9. Peanut sauce
  10. 1.5 cup pure peanut butter from health shop
  11. 5-20 chillies
  12. 10 candle nuts or macadamia nuts
  13. 2 tsp salt
  14. 30 gr coconut sugar
  15. 10 kaffir lime leaves
  16. 1 cup water

Steps

  1. Cut up chicken fillet into cubes. Set aside.

  2. Blend all the spices using stick blender and pour into pieces of chicken fillets. Marinade at least for 30 minutes.

  3. Skewer the chicken make sure it’s not crowding the stick to avoid undercooked chicken.

  4. Grill using bbq or even better using charcoal.

  5. Blend all peanut sauce spices excluding kaffir lime leaves. Cook on the stove on low fire, keep stirring until fully cooked. Pour onto your sate.
