Sarciadong Manok, what it is called in the Philippines. It is seasoned with fish sauce for an Umami taste
- 4 cloves Garlic
- 4 pcs Tomatoes
- Chicken sllices
- Tomato paste
- Chicken broth
- leaves Dried bay
- Fish sauce
- Ground black or white pepper
- Green peas
Heat pan with oil. Saute onion and minced garlic.
Add the diced tomatoes. Cook until tomatoes soften.
Add chicken to the pan and cook until outer layer turns lights brown.
Add in the tomato paste and the chicken broth. Add water if needed.
Add the dried bay leaves and parsley.
Add green peas to have that lively color.
To taste, add in 1 or 2 tbsp of fish sauce and ground black or white pepper. Let the mixture simmer for 20 to 30 minutes. Check if chicken is thoroughly cooked before serving.
