Fresh Cranberry Relish

I don’t remember where I came upon this recipe, but I’ve stuck with it since I’ve found it. I hope you like it


  1. 1/2 large orange (finely chopped with peel)
  2. 1 1/2 lbs cranberries
  3. 1 1/2 cups sugar
  4. 2 tbsp lemon juice
  5. 1/2 cup apricot preserves
  6. 8 0z can of crushed pineapple (drained)


  1. Cook cranberries and sugar over medium heat until cranberries pop and combine with sugar to make a “syrup”

  2. In a bowl mix cranberries and apricot preserves until melted together

  3. Mix in the rest of the ingredients, cover and refrigerate til chilled well
