Delicious poached chicken with rice originated from Hainan of Southern Province,China. Dipped with chilli sauce and soy sauce and garnish with cucumber and coriander
- Whole chicken
- 1 pot hot water
- Spring onion
- Soy sauce
- Cucumber and coriander
- Chilli sauce ingredients
- Red chilli minced
- Minced ginger and garlic
- 1/2 tsp salt
- 1 tsp sugar
- 1 tbsp chicken soup
Stuff spring onion and ginger at the back of whole chicken.
Dip whole chicken into hot water pot for 45 minutes. Make sure water is hot but not boiling. This to ensure the meat is cooked thoroughly with smooth texture.
Take out the chicken and let it cool down before chopping it into smaller pieces.
Cook rice with chicken soup just boiled and add ginger and lemongrass for fragrant. You can add chicken lard with frying some chicken skin to cook with the rice.
You can use ready make chilli sauce or make your own with the sauce ingredients. Garnish chicken with cucumber and coriander and serve with rice, chilli sauce and soy sauce.
