Instant Pot Chicken White Chili

Ingredients

  1. 2 boneless, skinless chicken breast, cubed
  2. 1 pound dry pinto beans
  3. 6 cups sodium free chicken stock
  4. Medium onion, chopped
  5. Bell pepper, chopped
  6. 2 cloves garlic, minced
  7. 1 tsp salt
  8. 1 tsp red pepper flakes
  9. 1 tsp cumin seeds
  10. 1 Tbs dark chili power
  11. 2 tsp pepper
  12. 4 bay leaves

Steps

  1. Place all ingredients in Instant Pot

  2. Select Bean/chili setting. Should be high pressure

  3. Set timer for 55 minutes

  4. Make sure steam valve is closed

  5. Start

  6. After cooking, release steam

  7. Remove bay leaves, test seasoning

  8. With potato masher, mash about 1/2 the beans (this will also shred the chicken)

  9. Serve with corn bread or tortilla chips, salsa, queso fresco, avacado and lime wedges
