Keto Mini Meatloaf

Continuing to reduce our carbs in a variety of ways. My husband will never suspect these were made with flaxseed instead of breadcrumbs, and neither will anyone you serve these to! Bwahahaha!

Ingredients

  1. 1.5 lbs 80/20 ground beef
  2. 2 eggs
  3. 1/2 cup ground flaxseed (aka milled flax)
  4. 1/2 cup heavy cream
  5. 1/2 tsp onion powder
  6. 1/4 tsp garlic powder
  7. 1/2 tsp salt
  8. 1/4 tsp pepper

Steps

  1. Preheat oven to 350°F. Arrange four mini loaf pans spread evenly on a baking sheet. Set aside.

  2. Place all ingredients in a large bowl. Mix until well combined. I like doing this by hand to ensure everything is evenly blended.

  3. Divide meat mixture into four portions. Roll each portion into a log shape. Place one meatloaf per loaf pan. Press down on each log to mold to shape of loaf pan.

  4. Place in oven. Bake 25-30 minutes. Top with sugar free salsa, sugar free ketchup, or any other keto friendly topping you wish. Enjoy!
