Lemon cake?

No fail lemon cake

Ingredients

  1. Crust
  2. 100 g dates ?
  3. 60 g nuts ?
  4. 1 tbs coconut oil ?
  5. Lemon layer
  6. 1/5 lemon juice ?
  7. 30 g corn starch ?
  8. 60 g coconut sugar
  9. 400 ml coconut milk ?
  10. 150 g tofu drained ?
  11. 3/4 tsp turmeric ?
  12. 1 lemon zest ?

Steps

  1. Blend dates, nuts and coconut oil in a food processor.

  2. Form a crust, put it in the fridge.

  3. In a saucepan mix corn starch, sugar and turmeric.

  4. Stir in coconut milk, lemon juice, lemon zest and tofu. Blend all the ingredients.

  5. Bring to a boil, stirring constantly. After 1 minute remove from heat.

  6. Pour it into crust and let it cool for at least 4 hours.
