- 2 pounds yukon gold potatoes
- 1 cup milk
- 6 tablespoons butter
- Pinch salt
- Pinch freshly ground pepper
- Pinch chopped scallions
Rinse the peeled potato chunks and put them in a large, microwave-safe bowl.
Cover the or bowl with plastic wrap and cut a small vent in the top for steam to escape.
Put the potatoes in the microwave on high heat for 8 to 10 minutes, or until the potatoes are tender.
Carefully remove the bowl from the microwave, then transfer to a larger bowl for mashing.
