  • 1apple, skinned and cut into small pieces

    DIRECTIONS

  • Mix dry ingredients: oats, baking powder, cinnamon and salt.
  • Mix wet ingredients (milk, egg, syrup, vanilla) in large, separate bowl.
  • Add dry ingredients to wet.
  • Mix in apple.
  • Used medium muffin pan w/ paper liners sprayed with Pam. Ice cream scoop made 12 muffins with a little extra for a glass ramekin.
  • Bake at 350 degrees for 25-27 minutes.
  • Cool 5-10 minutes in pan, then remove to rack.
  • Fresh for 1 week, or freeze well.
