Ingredients
- 1/2 cup olive oil
- 4 tablespoons finely chopped onion
- 6 cloves garlic
- 6 tablespoons finely diced peeled carrot
- 6 tablespoons finely diced celery
- 1/2 pound ground sweet Italian sausage cooked
- 1 can (16 oz) crushed tomatoes
- 3 cans cannellini beans drained
- 1 can cannellini beans pureed
- 8 cups beef broth
- 1/2 pound pasta of your choice cooked (ditalini, elbows, orzo, etc..)
- 1/2 cup grated cheese
Steps
Heat olive oil in large pot
Saute onion, carrots, garlic, and celery until softened
Add tomatoes, turn heat to low, and simmer for 20 min
Add beans and broth and simmer on low for one hour
When ready to serve, stir in cooked pasta and grated parmesan cheese
