Paula’s Coconut Vanilla Walnut Banana Bread ??

I never liked banana bread until I perfected this recipe. Rich, moist, and full of delicious island flavors.

Ingredients

  1. In a large bowl, blend:
  2. 4 super ripe bananas, mashed
  3. 1/2 cup Trader Joe’s coconut oil, melted
  4. 1/2 cup sugar
  5. 1 teaspoon vanilla
  6. Then add:
  7. 1/2 cup almond flour
  8. 1/2 cup all purpose flour
  9. 1 teaspoon baking powder
  10. Finally, mix in:
  11. 2 eggs, well beaten
  12. 1 tablespoon sour cream
  13. 1/2 cup chopped walnuts

Steps

  1. Bake in buttered loaf pan in preheated 325 degree oven for 1 hour. Cool for 10 minutes and enjoy!
