Pepper jack Chicken

This is a family favorite that even the kiddos love


  1. 3 Boneless skinless chicken breasts
  2. 1 cup Italian dressing
  3. 1 Red bell pepper
  4. 1 Orange bell pepper
  5. 1 Yellow bell pepper
  6. 1 cup Shredded mozzarella cheese
  7. 10 slice Pepper jack cheese


  1. Marinate your chicken breasts in the Italian dressing for at least 2 hours (not required but suggested)

  2. Season chicken with what you like, I like to use a tomato basil seasoning

  3. Bake chicken at 375 for 20 minutes

  4. While chicken is baking, cut and clean the seeds out of the peppers

  5. After the 20 minutes sprinkle the bread crumbs on top of the chicken and add the peppers around the chicken, bake an additional 10 minutes

  6. Sprinkle the shredded mozzarella all over everything… Don’t be shy

  7. Lay slices of pepper jack on top, covering all the peppers and the chicken and put it back in the oven an additional 10-20 minutes depending on if you just want the cheese melted or golden. Serve and enjoy
