Next time, I would added more vegetable toppings.
- 1 large cauliflower head broke up into florets
- 2 tbls olive oil
- 1 1/2 cups marinara sauce
- 2 cup shredded mozzarella cheese
- 2 oz pepperoni slices
- 2 tsp Italian seasoning
Preheat oven to 425.
Combine olive oil and cauliflower in 9×13 pan and roast for 25 minutes.
Spread marinara over cauliflower. Top with cheese, Italian seasoning and pepperoni.
Bake for 10 minutes.
