Pizza Casserole (low carb)

Next time, I would added more vegetable toppings.

Ingredients

  1. 1 large cauliflower head broke up into florets
  2. 2 tbls olive oil
  3. 1 1/2 cups marinara sauce
  4. 2 cup shredded mozzarella cheese
  5. 2 oz pepperoni slices
  6. 2 tsp Italian seasoning

Steps

  1. Preheat oven to 425.

  2. Combine olive oil and cauliflower in 9×13 pan and roast for 25 minutes.

  3. Spread marinara over cauliflower. Top with cheese, Italian seasoning and pepperoni.

  4. Bake for 10 minutes.
