- Black beans in chilly sauce
- Green and red pepper
- Black mushrooms
- Peanut butter
Add small amount of water to a pan and wait until it starts boiling. Then add the veggies to the water and cook them uncovered.
Once the water is fully absorbed, remove the pot from the heat, cover it and let the veggies steam for a few minutes.
To another pan add quinoa and twice that amount water, then cook uncovered until the water is absorbed. Once the quinoa is cooked remove the pan from the heat and keep it covered for around 5-8 minutes (in order to steam the quinoa)
Fill one half of a bowl with the steamed quinoa and on top add the veggies and peanut butter.
Voilà, your meal is ready 🙂
