Roasted Potatoes with Smoked Trout

Canned smoked trout is a pantry staple you must try; it has a very mild, almost bacon-y flavor that enriches every dish you add it to.

Ingredients

  • 12 ounces fingerling potatoes
  • 1/4 cup water
  • 1/4 cup thinly sliced red onion
  • 1/4 cup fresh flat-leaf parsley leaves
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon chopped fresh rosemary
  • 1/2 teaspoon black pepper
  • 3/8 teaspoon kosher salt
  • 2 ounces smoked trout

How to Make It

Cut 12 oz. fingerling potatoes in half lengthwise; place in a microwavable bowl with 1/4 cup water. Cover with plastic wrap, and pierce with a fork to vent. Microwave until tender, 6 to 7 minutes; drain. Combine potatoes, thinly sliced red onion, fresh flat-leaf parsley leaves, olive oil, chopped fresh rosemary, black pepper, and kosher salt in a bowl. Flake smoked trout into large pieces; gently fold into potato mixture.
