A must have dish when you have dim sum breakfast! Juicy, tender and savory sweet spare ribs with fermented black beans served in a small dim sum plate, now you can enjoy this same authentic dish at home!
- Fine spare ribs / soft bone ribs
- Minced garlic
- Minced ginger
- 1 tsp fermented black beans
- 1 tbsp soy sauce
- 2 tsp brown sugar
- 1 tsp stock powder
- 1/2 tsp white pepper
- 1/2 tsp sesame oil
- 1 tbsp Shaoxing wine
- Optional ingredients to alkaline the spare ribs
- Baking soda / alkaline water
Soak fermented black beans in water for 30 minutes. Add all ingredients, sauce, wine and spare ribs in a zip lock bag, vacuum it by dipping in water and zip tightly. Marinate it overnight.
Transfer all ingredients in a steamig plate and steam medium heat for 30 minutes and serve in a smaller dim sum plate.
To make the ribs smoother and white in texture, use 1 tsp of baked baking soda in 150 degree celcius in bowl of water and wash it. Pour out the water and wash away the baking soda. Dry it and marinate with ingredients.
