Tamatillo Salsa (Salsa Verde)


  1. 1 1/2 lbs tamatillos
  2. 1/2 cup sliced white onion
  3. 3 cloves garlic
  4. 3 jalapeno peppers (seeded)
  5. 3 serrano peppers (seeded)
  6. 1/2 cup chopped cilantro
  7. Juice of 1 lime
  8. Salt (to taste)
  9. Pepper (to taste)


  1. Remove skins from tamatillos and rinse. Slice tamatillos in half. Place under broiler until soft, flipping as needed to roast both sides.

  2. Prepare onion, garlic and peppers. Roast under broiler until soft, flipping as needed.

  3. Place all ingredients (including lime juice and cilantro) into food processor or blender), blend until evenly chopped. Season to taste. Chill and serve.

  4. Alternatively: the peppers, onions, tamatillos, and garlic can be roasted in a smoker until they are tender.
