Zucchini Instant Pickles


  1. 1 Giant Zucchini
  2. 2 tablespoons Sea salt
  3. 1 oz Shio Konbu
  4. 4 table spoons Dashi Shoyu
  5. 1 ” cube of chopped ginger


  1. Peel zucchini with Peeler in stripe

  2. Cut into size 8mm thickness

  3. Chop ginger into small pieces

  4. Put cut zucchini into a bowl and put sea salt and mix and leave for 20-30min

  5. Drain water from zucchini out the bowl

  6. Add ginger and shio konbu and wait for 20-30min.
