Nigella Lawson’s gingerbread eggnog cocktail and more Christmassy drinks

Nigella Lawson has recommended a gingerbread eggnog cocktail to enjoy this Christmassy season, among others.

What is eggnog?

Eggnog is a mixture of milk, cream, sugar, spices and eggs that pairs perfectly well with rum.

And, don’t worry, Nigella has shared how to make your eggnog at home so that you have enough for 12 servings.

By having all the ingredients at home, you are also saving money too as cocktails out are pricey.

Gingerbread eggnog cocktail


For the eggnog:

  • Six medium egg yolks
  • 150g granulated sugar (plus one tsp)
  • 500ml milk
  • Two cloves
  • One cinnamon stick
  • 225ml double cream
  • One teaspoon nutmeg
  • Three to four tbsp whiskey or bourbon

For the gingerbread eggnog cocktail

  • 30ml ginger syrup
  • 30ml rum
  • 120ml eggnog
  • Ice cubes


  • Ginger syrup
  • Crushed gingernut biscuits

Make the eggnog

1. In a stand mixer fitted with the whisk attachment, whisk the egg yolks with sugar until light and fluffy.

2. Combine the milk, cloves and cinnamon stick in a saucepan and heat gently, just before boiling point.

3. Slowly add about half of the hot milk to the egg mixture, whisking constantly so it doesn’t scramble.

4. Pour the mixture back into the saucepan and continue cooking over low-medium heat until it thickens slightly and coats the back of a wooden spoon. Do not boil.

5. Remove from the heat and leave to cool for five minutes. Stir and strain the mixture through a fine mesh sieve into a bowl.

6. Add the cream, nutmeg and whisky or bourbon, then cover and refrigerate. Leave to for eight hours or overnight.

Once the eggnog has matured in the fridge

7. Ladle eggnog into individual glasses and serve with grated nutmeg and a cinnamon stick.

To make the gingerbread twist to the classic eggnog cocktail

8. Pour a little ginger syrup into a saucer and place the crushed ginger biscuits in a separate saucer.

9. Dip the rim of a cocktail glass in the syrup, then dip it into the crushed ginger biscuits to create an attractive glass rim.

9. Combine the ginger syrup, the rum or whisky and eggnog in a cocktail shaker filled with ice. Shake well for a few seconds until cold, then strain into your cocktail glass.
